They are creamy, delicious, low-carb and keto-friendly! The classic deviled egg will become your new favorite appetizer! They are super easy to make and only have 4 ingredients.
Classic Deviled Eggs are the perfect Keto snack!
These Keto Classic Deviled Eggs have become our favorite keto snack. I make a dozen Instant Pot Hard-Boiled Eggs for the week and with any leftover eggs I make them into deviled eggs for snacking. They are a perfect balance between protein and fat with 0 net carbs! We would rather eat a creamy and delicious keto deviled egg over a plain boring hard-boiled egg. Boris takes these to work eating them for breakfast or as his keto snack. These deviled eggs easily fit into his daily macros and he loves them!
Here is what you will need:
- Hard-boiled eggs
- Cornichon pickles
- Salt and Pepper
How to make Keto Classic Deviled Eggs
What makes these deviled eggs different is the cornichon pickles that I chop up fine with a little of the juice adding it to the egg mixture. It adds a fresh flavor, crunchy texture to the creamy egg mixture balancing out all of the flavors.
First off, you will want to make the Instant Pot Hard-Boiled Eggs. This recipe is fool-proof! You won’t have the shell sticking to the white part of the eggs as you peel them. The Instant Pot Hard-Boiled Eggs recipe takes little time and the eggs are super easy to peel.
Peel the hard-boiled eggs and cut them in half. Scoop out the egg yolks into a medium-sized bowl and set the white part of the egg on a plate.
Mashup the egg yolks with a fork. Add the mayonnaise, mustard, chopped up pickles and juice to the bowl and mix well.
Add salt and pepper to taste. Mix everything together, scoop the yolk mixture evenly into the white part of the eggs. Sprinkle with paprika and you are done!!!
Here are some variations:
Cheese-stuffed eggs, substitute the mustard for 6 tablespoons of grated Parmesan cheese.
Bacon-stuffed eggs, add 3 heaping tbsp finely chopped cooked bacon to the filling.
Curried-stuffed eggs, add 2 tbsp of curry powder to the filling. I use madras curry powder.
Madras curry powder is a blend of coriander, turmeric, cumin, salt, gram flour, chilies, mustard, fenugreek, fennel, garlic, black pepper and star anise. It adds so much flavor to these Keto Classic Deviled Eggs and it’s gluten-free!
Keto Classic Deviled Eggs
- Pressure Cooker
- Peel eggs and slice in half.
- Scoop out the cooked yolk and place them in a medium bowl.
- Add mayonnaise, mustard, finely chopped pickles and a few drops of pickle juice.
- Add salt and pepper to taste.
- Mix all together and scoop yolk mixture into each half of the egg whites.
- Sprinkle with paprika. It's that easy!
